Restaurant BI: ingredient yield by recipe

2 min reading
Editorial illustration: Restaurant BI: ingredient yield by recipe

Plan restaurant BI connecting ingredients, preparation weighings and recipe versions to compare yield without confusing routine loss and exceptional waste.

Purchase price alone does not explain portion cost. Cleaning, preparation and disposal change the usable quantity of each ingredient.

What the quote needs to include

Connect batches, preparation weighings and recipe versions. Separate expected trimming from exceptional disposal and retain compatible measurement units.

Delivery does not replace sanitation, nutrition or food-safety procedures.

The comparison needs to identify each transformation: receiving, trimming, cooking or assembly. A recipe expressed in purchasing units may hide conversion factors applied informally by kitchen staff. Require discussion and recording of those factors per ingredient rather than filling missing values with unverified averages. Explain which measurements staff can realistically capture during preparation.

Separate expected recipe cost from observation of the actual batch. Ingredient substitutions, supplier changes and portion sizes may change together. The BI supplier should explain how each event appears historically instead of attributing every deviation to kitchen productivity. First establish a repeatable weighing procedure and assign ownership for changes to recipe specifications.

Specific acceptance criteria

  • Distinguish gross weight from usable weight.
  • Connect applicable recipes to preparation dates.
  • Record losses with reviewable operational reasons.

The exception that determines acceptance

A batch yields less than usual. Analysis must expose different consumption without retroactively changing portions produced under the previous recipe.

During acceptance, prepare the same recipe at another batch size and inspect rounding. Exceptional disposal should remain identifiable without changing the agreed standard loss. If staff cannot capture the required measurements during work, simplify collection. An indicator that cannot be maintained operationally loses value even when its technical data model is sophisticated.
